these baked parmesan truffle fries are so delicious; you won’t even know they’re healthy! cutting them into thin strips allows the oven to really crisp them up. this way, you get all the crunch without all the fat that comes with frying. it is truly a cathartic experience when they come out of the oven, piping hot, and the smell hits your nose as you sprinkle the pan with fresh parmesan and truffle oil. mmmmmm. with fries this flavorful, you don’t even need the ketchup (but of course, ketchup-a-holics like myself might want it anyway..). enjoy!

everyone loves french fries, let’s be honest. and parmesan truffle fries sound so fancy, right? doctoring them up in this way will impress your guests, and it takes about 30 extra seconds. all you have to do is sprinkle the parm on them when they’re hot, drizzle a little bit of white truffle oil (a little bit goes a long way), and then sprinkle some chopped parsley for fresh color. they look great and taste even better! 

Baked Parmesan Truffle Fries

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Baked Parmesan Truffle Fries

Ingredients

2 large russet potatoes (if you, like I, like to eat the skin, buy organic)

olive oil

salt

white truffle oil

ground black pepper

dried parsley (if you have fresh on hand, use that!)

parmesan cheese (freshly grated)

Instructions

preheat oven to 450.

scrub the dirty potatoes & thoroughly dry.

cut potatoes into 1/4in. fries.

transfer fries to a big bowl and drizzle in enough olive oil to coat each with a thin layer (you can always add more--start with a little, toss, & add more if necessary).

salt the fries and toss once more (start with around 2 tsp.--a bit more will be added after they're baked).

spread another thin layer of olive oil onto your rimmed baking sheets to prevent sticking (use enough baking sheets so that the fries can be spread out--don't overcrowd your pans or else you won't get crispy fries).

lay the fries out on the baking sheets (again, make sure that they don't overlap--we want baking not steaming!).

cook fries for 20 minutes or until the edges begin to brown.

flip fries & cook for another 5-10 minutes, or until desired crispiness is reached.

once they come out of the oven, drizzle white truffle oil (start with 1 tbs., add more if you want a stronger truffle flavor), & sprinkle ground black pepper, parsley (a couple of tsp. of each), and a bit more salt to taste.

toss the fries then grate fresh parmesan cheese over the hot pans--the cheese will immediately melt over the delicious fries & you will be able to smell the truffle/parm combo.

top with the chopped fresh or the dried parsley & serve immediately!
