cinnamon raisin oatmeal bread

i made this cinnamon raisin oatmeal bread yesterday morning for an impromptu brunch with friends. it’s easy to put together (i literally chose it because it was the only thing i could make with the ingredients i easily had on hand), makes the house smell great, and is insanely delicious. everyone loved it!

remember cinnamon sugar toast?? you know, those mornings when mom would make an easy breakfast before school by smearing butter on white bread then covering it in sugar and cinnamon (at least cinnamon is good for you..). or, if not that, at some point in your childhood you had to have eaten a giant bowl of cinnamon toast crunch, right?! cinnamon raisin bread? cinnamon raisin bagel? whatever, you get the point–they’re all good, and this is even better!

cinnamon and sugar really is a great combination, and a little sugar/carbs/butter every now and again is good for the soul i say! this bread even adds in raisins AND oatmeal (um hello, that definitely makes it healthy)–so make this yummy and childhood reminiscent bread, and cheers to health!

cinnamon raisin oatmeal bread

Prep Time: 10 minutes

Cook Time: 55 minutes

Total Time: 1 hour, 5 minutes

Yield: 1 loaf

cinnamon raisin oatmeal bread

Ingredients

bread:

2 c. all-purpose flour

3/4 c. old-fashioned oats

3/4 c. brown sugar

2 tsp. cinnamon

3 tsp. baking powder

1 tsp. salt

1 tsp. vanilla

1/4 c. melted butter

1 c. milk

2 eggs

3/4 c. raisins

glaze:

1 c. powdered sugar

2 tbs. milk

1 tsp. vanilla

Instructions

bread:

preheat oven to 350.

in a large bowl, mix together flour, oats, sugar, baking powder, cinnamon, & salt.

add in the milk, eggs, vanilla, and melted butter (make sure the butter is cool enough so that the eggs do not scramble), and stir until combined.

add the raisins.

grease an 8.5" loaf pan with butter & dust with flour.

pour mixture into prepared loaf pan, and bake for about 55 minutes (or until inserted toothpick comes out clean).

glaze:

while the bread cooks, combine the powdered sugar, milk, and vanilla in a small saucepan on low heat.

stir until combined (be careful that it does not burn).

remove from heat & drizzle over loaf.

serve with coffee (or a mimosa..)!
