Ingredients

  • 2 cups mashed bananas make sure they're REALLY ripe--aka the brown bananas you don't know what to do with
  • 4 eggs
  • 4 tbsp melted coconut oil
  • 1/2 cup almond butter
  • 1/2 cup coconut flour
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp vanilla extract
  • 1/2 cup chocolate chips use sugar free or omit if you want to keep this recipe 100% paleo
  • 1/2 cup walnuts coarsely chopped

Instructions

  • preheat the oven to 350 and grease a 9x5 loaf pan (you can use butter or coconut oil--whatever is easiest and you have on hand)
  • mash the bananas in a large bowl until they form a paste-like consistency
  • melt the coconut oil, and add to the mashed bananas
  • add in the almond butter and stir
  • once the coconut oil is incorporated and the mixture has cooled down a bit, add in the eggs and vanilla extract
  • in a separate bowl, mix up coconut flour, cinnamon, salt, baking powder, and baking soda
  • add the dry ingredients into the wet until incorporated
  • last, add in the chocolate chips and walnuts
  • pour into the prepared loaf pan and bake ~1 hour--check with a toothpick after 45 minutes, and bake until the toothpick comes out clean
