paleo banana bread

paleo banana bread--delicious, moist, gluten free, and no added sugar (except the chocolate chips..)!

Ingredients
  

  • 2 cups mashed bananas make sure they're REALLY ripe--aka the brown bananas you don't know what to do with
  • 4 eggs
  • 4 tbsp melted coconut oil
  • 1/2 cup almond butter
  • 1/2 cup coconut flour
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp vanilla extract
  • 1/2 cup chocolate chips use sugar free or omit if you want to keep this recipe 100% paleo
  • 1/2 cup walnuts coarsely chopped

Method
 

  1. preheat the oven to 350 and grease a 9x5 loaf pan (you can use butter or coconut oil--whatever is easiest and you have on hand)
  2. mash the bananas in a large bowl until they form a paste-like consistency
  3. melt the coconut oil, and add to the mashed bananas
  4. add in the almond butter and stir
  5. once the coconut oil is incorporated and the mixture has cooled down a bit, add in the eggs and vanilla extract
  6. in a separate bowl, mix up coconut flour, cinnamon, salt, baking powder, and baking soda
  7. add the dry ingredients into the wet until incorporated
  8. last, add in the chocolate chips and walnuts
  9. pour into the prepared loaf pan and bake ~1 hour--check with a toothpick after 45 minutes, and bake until the toothpick comes out clean
