sweet potato fries (baked!)

I love sweet potato fries, and i love baked sweet potato fries even more! who wants to fry anything at home? not only is it fattening, but cleaning a fryer and dealing with oil splattering all over the kitchen is really not my idea of a good time. for these reasons, I prefer to bake them; the seasonings and easy clean-up will make you forget all about the extra oil!

sweet potatoes tend to contain extra moisture, so it can be hard to get the fries crispy enough to replicate the truly coveted fried version. a lot of recipes recommend corn starch, which i’ve heard works really well. for me, however, i’ve found by trial & error that the true secret is to bake them once, let them cool, then throw them back into the oven. they warm and crisp up & become exactly what you are looking for in a french fry! and, don’t be frightened by the browned edges. they taste more caramelized, due to the sugars in the potato, rather than having that icky burnt flavor. i’m getting hungry posting this–see ya!

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: 2-3 servings

baked sweet potato fries

Ingredients

1 large sweet potato (each serves 2-3)

olive oil

1/2 tsp. smoked paprika

1/2 tsp. garlic powder

1/2 tsp. salt

1/2 tsp. pepper

Instructions

preheat oven to 400 degrees.

wash & peel the sweet potato.

thinly slice--about 1/4 in. in thickness (this is the only way I've found to get them crispy).

in a large bowl, toss the slices with enough olive oil to coat.

add in the spices, then toss to coat each piece (add more spices if necessary).

lay out the slices on a cookie sheet, covered in parchment paper for easy clean up.

make sure the slices do not overlap; if the pan is too crowded the fries will never crisp up.

cook the fries for roughly 20 minutes, flipping in between if necessary (check them about 1/2 way through and see how the other side is doing).

honestly, in my experience, even when cooked (and edges burned), they still come out fairly soggy. the trick I've found to fix this is to let them cool, then cook again for 10 minutes (or until done--just keep checking). this second time around will get them nice and crispy like you want them!
