simple lemon & parmesan kale salad

this simple lemon & parmesan kale salad is so good & so easy to make. if you don’t like kale because you think it’s too tough and hard to eat, think again! the trick lies in massaging the kale to make it more tender, and the lemony, garlicky olive oil with parmesan cheese makes it oh so good. it’s a perfect & easy weeknight side dish, or you could throw some salmon or chicken on top to make it a main course. yum!

this salad tastes and makes you feel healthy, but in a delicious way. kale is tough, but when you break it down by massaging it the texture completely changes. it also helps to dress it a little bit early, which also helps break it down. when you massage, make sure and take out and of the tough stems, as those won’t break down no matter how much you massage!

you can also play with the salad. whatever you have leftover in your fridge would be good in it–avocado chunks, tomato, you name it!

Yield: 4 servings

Ingredients

1 large bunch of kale

1 large lemon

1/2c. freshly grated parmesan

1/3c. olive oil (this is one of my favorites )

3 cloves of garlic

1/4 tsp. salt

1/2 tsp. freshly ground pepper

Instructions

wash and dry the kale leaves.

remove the ribs/tough stems from the kale and rip into bite-sized pieces.

in a large bowl, juice the large lemon & whisk in the olive oil.

crush the garlic using a garlic press, and add the crushed garlic, salt, and pepper to the bowl.

add the kale leaves to the dressing mixture, and using your hands massage the kale into the dressing until well combined & the leaves become tender.

grate the fresh parmesan on top, mix again, & taste. add more salt if necessary.

enjoy with chicken, salmon, pasta, really just about anything! you can also add sliced almonds, pine nuts, avocado--whatever you like!
