turkey bolognese

Ingredients

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1.5 cups carrots minced
  • 1 cup celery minced
  • 1 cup yellow onion minced
  • 1 8oz package baby bella mushrooms chopped
  • 2 tbsp garlic minced
  • 1 28oz can crushed tomatoes
  • 1 24oz jar tomato sauce I used Whole Foods brand tomato mascarpone
  • .5 tsp red pepper flakes
  • .5 tsp salt
  • 1 tsp pepper
  • .25 cup fresh basil chopped
  • .25 cup fresh parsley chopped

Instructions

  • in a pan over medium heat, add the olive oil and brown the turkey meat.
  • when the meat's about fully cooked, add in the carrots, celery, onion, mushrooms, and garlic. sauté until the veggies soften and are fragrant (but be sure to not burn the garlic) ~5-7 minutes.
  • add the meat and veggies to a slow cooker, along with the crushed tomatoes, jarred tomato sauce, pepper flakes, s&p, basil, and parsley.
  • stir to combine, and set the slow cooker to low for 8 hours or high for 4 hours.
  • serve over your favorite pasta (I used palmini pasta). 
  • also, while cooking, I recommend whipping up some cheesy cauliflower "bread" as a side dish. simply use the dishandchips cauliflower pizza recipe for the crust. after it bakes for the initial 20 minutes, top with mozzarella cheese, and put back into the oven until the cheese is bubbly and begins to brown. enjoy!
