cauliflower pizza

in honor of it being march 14 (aka pi day, and my dad’s birthday!), i thought it appropriate to post my recipe for cauliflower pizza.  you can buy the full head of cauliflower and go to the trouble of washing, chopping, and getting out the food processor, but why would you do that?  now they sell riced cauliflower already done for you in the grocery store!  makes life so much easier, and then you can whip up this easy, carb-free, & delicious meal in no time!

the first time i made this recipe, i did actually buy the head of the cauliflower.  i chopped it up, dirtied all of the 85,000 components of the food processor to pulverize it, then squeezed out the water with cheese cloth as was recommended.  i would like to recommend to you that you do NONE of that.  it turned out delicious, don’t get me wrong, but it was a total pain.  after a long day of work, the last thing i feel like doing is dirtying an entire dishwasher full of food processor components..

so, instead, just buy the stuff already riced!  then, instead of using the cheese cloth, it is SO much easier to just steam the riced cauliflower in a fine mesh sieve, then carry the sieve over to the sink.  find a bowl that fits well inside the sieve, and just push down to get the excess water out (similar to my cauliflower mash recipe).  then all you have to do is mix the rest of the ingredients into the cauliflower, form the crust, bake, and the crust is done!

once the crust is cooked, top with whatever pizza toppings you like.  pictured in this post are two different versions: 1. margarita with fresh basil and mozzarella, and 2. pepperoni and mushroom.  both were so yummy–it just depends on what you’re in the mood for!  next time i think i might try a white pizza or a pesto pizza.  there are so many options once you learn how to do the easy crust.  happy pi day!!

Ingredients

crust:

1/2c. shredded mozzarella cheese

1 bag of riced cauliflower (16 oz.)

1/4c. grated parmesan cheese

1tsp. oregano

1/2tsp. salt

1/2tsp. garlic powder

2 eggs

toppings

for pepperoni & mushroom: jarred red sauce, sliced mushrooms, pepperoni (i used calabrese salami)

for margarita: jarred red sauce, sliced fresh mozzarella, whole fresh basil leaves

Instructions

crust:

preheat oven to 400.

pour the riced cauliflower into a fine mesh sieve and place over a pot of boiling water to steam.

once the cauliflower is cooked (it will start to look translucent--takes 8 or so minutes--make sure to stir while it steams so all of it gets cooked), find a bowl that fits nicely inside the sieve and push out the water over the sink.

let the cauliflower cool a bit (you don't want to scramble the eggs!) then mix in the rest of the ingredients.

line a cookie sheet with parchment paper and pat the "dough" out into a circle that's about 1/4-1/2in. thick (or you can use a pizza pan if you have one) & cook for ~20 minutes, or until the crust starts to get golden.

top the pizza with whatever you like, then bake for 10 more minutes.

that's it! now eat!
