who needs regular, standard ole mashed potatoes when you can have cauliflower mash?! cauliflower mash is MUCH simpler to make than the real thing, and it has MUCH fewer calories. now you’re thinking yeah, so it’s simpler and lighter, but how does it taste? this cauli mash literally taste amazing; my husband swears it’s even better than the real thing. now go eat a big, guilt-free, delicious heap! an entire head of cauliflower has about 146 calories. this recipe, per serving (and i allow for a pretty large serving size here), only contains about 82 calories. ever think you’d be able to eat a pile of what tastes like delicious mashed potatoes and feel good about it?! cauliflower is truly an amazing ingredient. i love to serve this with any sort of meat; try this recipe along with my roasted honey mustard salmon and simple lemon & parmesan kale salad for a healthy & delicious meal!

cauliflower “mashed potatoes”

Prep Time: 10 minutes

Cook Time: 12 minutes

Total Time: 22 minutes

Yield: 4 large servings

Serving Size: 1 large serving

Calories per serving: 82 per serving

Ingredients

1 head of cauliflower, cleaned with the florets & stems roughly chopped

1/4 c. aged cheddar cheese (or whatever cheese you have around, parmesan works well too)

2 tbsp. sour cream

1 tbsp. chopped up chives, plus extra for topping

5 cloves of garlic

salt & pepper

Instructions

boil water in a steamer.

in the steamer basket, add 1/2 of the cauliflower and all of the garlic and liberally salt. then add the other 1/2 of the cauliflower on top and salt again.

steam for about 10-12 minutes, or until the cauliflower is fork-tender.

place steamed cauliflower and garlic into a mesh strainer over the sink. using a nonbreakable bowl that will fit into the strainer, squeeze out as much of the water as you can. this is a very important step. a lot of water = soupy, gross mash. getting it out = mashed potato-like consistency.

once the water is squeezed out, throw all of the cauliflower and garlic into a food processor.

add in cheese, sour cream, and chives and pulse until creamy. taste and add salt & pepper to taste.

scrape down the sides and blend until all thoroughly mixed. if the mash is a bit cool at this point, put into an oven-safe dish and into the oven at 350 for around 10 minutes to warm it up before serving.

sprinkle the top with the remaining chives, and enjoy!
