in honor of it being march 14 (aka pi day, and my dad’s birthday!), i thought it appropriate to post my recipe for cauliflower pizza.  you can buy the full head of cauliflower and go to the trouble of washing, chopping, and getting out the food processor, but why would you do that?  now they sell riced cauliflower already done for you in the grocery store!  makes life so much easier, and then you can whip up this easy, carb-free, & delicious meal in no time!

roasted honey mustard salmon is another one of my favorite go-to dinner recipes: it’s easy, healthy, and delicious. easy: the salmon only bakes for 10 minutes! delicious: it is moist and has fabulous flavor. the mustard and lemon tenderize the salmon, the honey adds a sweet note, and the thyme give it that homey, herby flavor. healthy: wild salmon (buy wild over farmed) is full of omega 3 fatty acids, and the honey mustard sauce only has ~70 calories per serving. dinner doesn’t get much better than that!

mexican caesar salad

this mexican caesar salad is so easy that you can put it together in literally about 15 minutes (can you tell that’s a theme with me?)! it’s a great accompaniment to tacos, quesadillas, empanadas, enchiladas, etc. you can top it with whatever protein you have around (taco meat to turn it into a different variation of my chicken taco salad would be great!), or just eat it on its own. if you love regular caesar salad, then you will love this cheesy, nutty, herby twist with a kick!

weeknight salad

i make this “weeknight salad” for dinner at least once a week. it’s easy to throw together when i get home from work, healthy, and so satisfyingly good. the flavors of olive oil, garlic, butternut squash, chicken sausage, and herbed feta cheese work so well together. if ever i ask my husband what he wants for dinner, this is what he requests. try it, and you’ll see why!

this simple lemon & parmesan kale salad is so good & so easy to make. if you don’t like kale because you think it’s too tough and hard to eat, think again! the trick lies in massaging the kale to make it more tender, and the lemony, garlicky olive oil with parmesan cheese makes it oh so good. it’s a perfect & easy weeknight side dish, or you could throw some salmon or chicken on top to make it a main course. yum!

I love sweet potato fries, and i love baked sweet potato fries even more! who wants to fry anything at home? not only is it fattening, but cleaning a fryer and dealing with oil splattering all over the kitchen is really not my idea of a good time. for these reasons, I prefer to bake them; the seasonings and easy clean-up will make you forget all about the extra oil!
